Coffee Merchandising and Marketing Ideas

  • Factors that influence the taste of a cup of coffee:

The quality and the type of beans

The blend of beans

The quantity of beans used in the preparation of coffee

The type of grind used to prepare the coffee

The freshness of the beans used

The quality of the water used

The type of roast (dark, light, etc.)

The temperature at which the coffee is brewed

The temperature at which the coffee is served

The age of the coffee after brewing

The cup that the coffee is served in

The cleanliness of the equipment in which the coffee is prepared and served

KEYS TO IMPROVING YOUR COFFEE SALES

  • Start with good beans. Don't buy price, buy quality.
  • Keep opened bags of beans in plastic sealed containers in a cool place.
  • Offer customers a wide selection daily: House Blend, Dark Roast, Decaffeinated Flavored
  • Use a timer to remember when to dispose coffee and to brew new:
  • Glass pots - after 25 minutes
  • Urns - after 1 hour
  • Air pots - after 3 hours
  • Never pour old coffee into new!
  • Grind your own beans using the correct amount for the system being used.
  • Use a quality coffee cup; customers prefer paper over Styrofoam.
  • Start a coffee club.
  • Offer customers free mugs and discounts when they use your mug.
  • Offer value pricing: Coffee and a bagel, or a newspaper, at a special price.
  • Consider placing an air pot at the checkout counter in the morning rush.
  • Keep the coffee bar clean, organized and well-stocked.
  • Provide cold creamers in stainless containers.
  • Track sales daily by units and by dollars.
